BAD Co Brewing & Distilling was born in 2014, starting off with a 10-barrel brew kit, it then soon became apparent that we could not keep up with demand. With an increasing core range and constant sell out of specials, BAD Co soon expanded! We now hold a 20-barrel brew kit, Canning, Bottling and Kegging packaging lines and produce in excess of 3 million pints a year. We have also just released the first of our in house distilled spirit range – Bad Co Gin!

Job Description

Head Brewer Role

Responsible for all aspects of the beer production process and day-to-day operations of the brewery.

Duties will include;

Wort production, fermentation management.

Management, supporting and continuous development of Assistant Brewer and Brewery Assistant

Understanding, maintaining brewery equipment and machinery

Critical QC/QA to ensure consistent beer quality and accuracy

Improve productivity and efficiencies throughout brewing operation

Accurate documentation of entire brew process

Develop our core range as well as devise new recipes as we increase the range and release specials

Develop and Maintain processes for future HACCP/SALSA and other regulatory matters

Working with contract brewing customers to maintain quality and consistency from brew to final pack

Implement and Maintain SOP’s throughout all brewing operations.

Procurement of quality and cost-effective Hop and Malt contracts

Thoroughness and commitment to cleanliness

Driving continuous improvement

Represent the company on Brewery Tours and Meet the Brewer events

Support with suppliers, clients and customers where necessary

This role will also include shift work during busy periods.


– Time Served Brewer in micro/macro Brewery

– Relevant brewing qualification from internationally recognised body.

– Creativity and passion for beer development

– Organised, Self -motivated, enthusiastic with good communication skills.

– Good understanding of IT skills and brewery management programs (Brewman)

– Great troubleshooting skills and attention to detail

– Positive, proactive attitude

– Physically fit as this will very much be a hands on role!

This is a full-time position, with a competitive salary. Negotiable based on skills and experience.
